A right old proper red white and blue Englishman once described my cookies as better than pork scratchings!!! RESULT


  • 120g lindt 55% chocolate

  • 120g soft unsalted butter

  • 75g dark brown sugar ( this give the cookies that fudgy feeling)

  • 50g caster sugar

  • 1tsp vanilla

  • 1 cold egg

  • 150g plain flour

  • 30g dutch cocoa

  • 1tsp bicarb soda

  • 1/2tsp salt

  • 1/2 pkt of nestle white choc bits

  • 1/2 pkt of nestle milk choc bits

  • macadamia nuts optional


  • 1.

    Pre-heat oven to 160 fan force

  • 2.

    Melt Lindt chocolate - place in bowl melt over a saucepan of simmering water stir occasionally. Once melted set aside and cool.

  • 3.

    Beat sugars and butter until pale.

  • 4.

    Add vanilla and egg beat till blended.

  • 5.

    Sift dry ingredients together, add all ingredients together.

  • 6.

    Use synthetic baking liners or line baking tray with baking paper.

  • 7.

    Roll balls ( as big a cookie as you want) press down with fork.

  • 8.

    Bake for 10 min, remove from oven and allow to cool on tray.

  • 9.

    Best consumed warm with a cold glass o milk!!!
