Lovely fresh meal suitable for vegetarians


  • Packet of cous cous

  • Block of Haloumi

  • Fresh Lemon

  • Sweet Chilli Sauce

  • Small packet of Rocket leaves

  • Fresh mint

  • Dried apricots or Red capsicum

  • Black pepper


  • 1.

    Make couscous according to directions on packet (it takes about 5 minutes or so).

  • 2.

    Cut half a block of haloumi into slices and flash fry until golden brown on each side.

  • 3.

    Mix a dressing of juice of 1/2 a lemon and sweet chilli sauce to taste.

  • 4.

    Mix in a bowl (or in the saucepan the couscous has cooked in) couscous, washed rocket leaves, fresh mint leaves, chopped dried apricots or red capsicum, the dressing and the haloumi slices.

  • 5.

    Grind a little black pepper over the top.
