Spanish Style Beef and Rice

A hearty one pot meal perfect for hungry people.
This can easily be changed into a vegetarian recipe by sustituting kidney beans or lentils for the beef.


  • 500g low fat minced beef

  • 1 large onion, chopped

  • 1 medium green capsicum, chopped

  • 2 garlic cloves, finely chopped

  • 800g tin chopped tomatoes

  • 1 medium zucchini, grated

  • 0.5 cup tomato paste

  • 1 and 1/3 cups Basmati rice

  • 2 cups boiling water(add more water if necessary)

  • salt to taste

  • pepper to taste


  • 1.

    Spray a large non-stick pot with cooking oil spray and heat up.

  • 2.

    Add onion, capsicum and garlic and cook for 2 minutes.

  • 3.

    Add beef and brown well. Make sureyoiu break the meat up as you cook.

  • 4.

    Add tomatoes, zucchini,tomato paste, water, salt and pepper.

  • 5.

    Add rice and stir to distribute rice evenly.

  • 6.

    Simmer gently for about 20 minutes or until rice is cooked.

  • 7.

    Stir 3 or 4 times during cooking time.

  • 8.

    Add extra water if needed.


If you prefer to use brown rice the cooking time is about 40 minutes.
Extra grated veges can be added to bulk out the meal.
