This can easily be changed into a vegetarian recipe by sustituting kidney beans or lentils for the beef.
Spray a large non-stick pot with cooking oil spray and heat up.
Add onion, capsicum and garlic and cook for 2 minutes.
Add beef and brown well. Make sureyoiu break the meat up as you cook.
Add tomatoes, zucchini,tomato paste, water, salt and pepper.
Add rice and stir to distribute rice evenly.
Simmer gently for about 20 minutes or until rice is cooked.
Stir 3 or 4 times during cooking time.
Add extra water if needed.
