A smooth, creamy cheesecake with a strong citrus bite.

Ingredients

  • Crust

  • • 3 cups biscuit crumbs

  • • 2/3 cup sugar

  • • 2/3 cup butter, melted

  • Filling

  • • 1 cup fresh lime juice

  • • ¼ cup water

  • • 2 teaspoons gelatin

  • • 1 ½ cups sugar

  • • 5 eggs, slightly beaten

  • • 2 tsp grated lime rind

  • • ½ cup butter

  • • 2 x 225gm cream cheese at room temperature

  • • ½ cup double cream

  • • Whipped cream

  • • Lime slices

Method

  • 1.

    Crust

  • 2.

    • Stir crumbs, sugar & melted butter in a medium size bowl

  • 3.

    • Press over bottom & up sides of 9 inch springform pan

  • 4.

    Filling

  • 5.

    • Combine lime juice & water in a small saucepan. Sprinkle gelatin over top

  • 6.

    • Let stand 5 minutes to soften

  • 7.

    • Stir sugar, eggs & lime rind into saucepan. Cook, stirring, over medium heat until almost boiling (about 7 minutes). Remove from heat

  • 8.

    • Beat butter & cream cheese in a large bowl. Gradually beat in lime mixture until well blended

  • 9.

    • Refrigerate, stirring occasionally until mixture thickens enough to mound slightly when dropped from a spoon (about 45 minutes)

  • 10.

    • Beat cream until stiff peaks form. Fold into lime mixture. Pour into prepared crust and cover. Refrigerate until firm (3-4 hours)

  • 11.

    • Run a thin knife around inside of pan to loosen sides. Remove sides from pan. Garnish with whipped cream & lime slices. Store in fridge until ready to serve
