Lovely and refreshing on a hot day!


  • 1kg yoghurt

  • 3 juicy limes

  • 1 1/2 cups icing sugar

  • 2 tablespoons glucose syrup


  • 1.

    Zest and juice the limes

  • 2.

    Add the zest, juice, icing sugar and glucose syrup to the yoghurt and stir thoroughly.

  • 3.

    Place into the freezer for 2 hours then stir well

  • 4.

    Freeze again.

  • 5.

    Alternatively the mixture can be placed into an icecream maker.

The yoghurt must be full fat, low fat wont freeze properly. Lemons or oranges can be used if limes are not available. For a twist, you can add a couple of shots of tequila to make margarita yoghurt.
