Quick and easy mid week meal. Even my husband can make this.


  • Chicken Breast Fillets chopped.

  • Flour

  • Garlic Salt

  • Thyme or Oregano depending on preferred taste

  • Cracked Pepper

  • Oil

  • Salad:

  • Mango

  • 1/2 Red Onion

  • Tomato

  • Avocado

  • Spinach Leaves

  • Dressing:

  • Mayonnaise

  • Wholegrain Mustard

  • Honey

  • Oil (good quality)


  • 1.

    Put flour, galric salt, oregano (or thyme) and Pepper into a resealable bag. Shake to mix herbs into flour. Dice chicken into bite size pieces. Place into resealable bag and shake to coat chicken pieces. Heat oil in frypan and add coated chicken pieces. Remove when cooked.

  • 2.

    Salad: Place spinach leaves in salad bowl. Dice remaining ingredients and toss into spinach leaves.

  • 3.

    Dressing: Mix couple tablesppons of mayo and wholegrain mustard, add good spoon of honey mix. Add more of above ingredients to your taste. Mix in oil to your own pouring consistency.

  • 4.

    Place salad onto plates, add chicken pieces and drizzle over dressing. Yum!


Play around with the dressing to suit your own tastes. Some people prefer more honey, less mustard etc. Use low fat mayo if watching your figure.
