Easy and tasty one pot chicken dish that is a variation of beef stroganoff.
Rinse and pat dry chicken pieces. Remove skin.
Chop onion into fine pieces.
Crush and peel garlic then chop finely.
Cut tomatoes into quarters and same with capcicum if using.
Heat oil in pan on and lightly fry onion and garlic till softened.
Add chicken pieces and brown slightly.
Add oxo cube,paprika and stir for a further minute.
Add chopped tomatoes and capcicum if using and
Fry for another minute.
Season with salt and pepper,cover and reduce heat to simmer.
Simmer till chicken cooked and tomatoes are reduced,about 15-20 minutes,
Stirring once or twice to blend and reduce tomatoes.
Once chicken is cooked,then reduce heat to low.
Add tub of sour cream or yogurt and blend with chicken pieces. Add chopped corriander and when sauce simmers, remove from stove.
Serve on a bed of fragrant jasmine rice and garnish with a sprig of corriander leaves.
