Easy and tasty one pot chicken dish that is a variation of beef stroganoff.


  • 1 kg chicken pieces or drumsticks.

  • 200 g/tub of light sour cream or light plain yogurt

  • 2 tomatoes

  • 1 red capcicum if desired

  • 1 onion

  • 1 chicken stock cube (Oxo)

  • 2 cloves garlic

  • paprika

  • salt and pepper

  • 1 Tbs chopped corriander and some for garnish

  • 2 Tbs olive or canola oil


  • 1.

    Rinse and pat dry chicken pieces. Remove skin.

  • 2.

    Chop onion into fine pieces.

  • 3.

    Crush and peel garlic then chop finely.

  • 4.

    Cut tomatoes into quarters and same with capcicum if using.

  • 5.

    Heat oil in pan on and lightly fry onion and garlic till softened.

  • 6.

    Add chicken pieces and brown slightly.

  • 7.

    Add oxo cube,paprika and stir for a further minute.

  • 8.

    Add chopped tomatoes and capcicum if using and

  • 9.

    Fry for another minute.

  • 10.

    Season with salt and pepper,cover and reduce heat to simmer.

  • 11.

    Simmer till chicken cooked and tomatoes are reduced,about 15-20 minutes,

  • 12.

    Stirring once or twice to blend and reduce tomatoes.

  • 13.

    Once chicken is cooked,then reduce heat to low.

  • 14.

    Add tub of sour cream or yogurt and blend with chicken pieces. Add chopped corriander and when sauce simmers, remove from stove.

  • 15.

    Serve on a bed of fragrant jasmine rice and garnish with a sprig of corriander leaves.


After adding sour cream ,do not let sauce simmer for too long as it may seperate.
