Moist and wholesome winter cake to cure the sweet tooth.
Pre heat oven at 180C.
Combine eggs, sugar, oil, vanilla and sifted dry ingredients in food proccessor.
Beat on a low speed until smooth.
Stir in carrots and mix well.
Then add walnuts last and mix well.
Pour mixture into a well greased 8 inch ring tin.
Bake on 180C for 45-50 minutes.
When cool, top with cream cheese icing.
Beat the butter and cream cheese until smooth and creamy.
Mix in lemon rind and iccing sugar.
Can be served with out icing for lactose free people.
Walnuts can be excluded if needed.
