Carrot and walnut cake

Moist and wholesome winter cake to cure the sweet tooth.

Ingredients

  • Cake:

  • 1.5 cups of finely grated carrots (appoximatly 2 medium carrots).

  • 0.5 cups of chopped walnuts.

  • 2 eggs.

  • 1.0 cups of caster sugar.

  • 0.75 cups of canola oil.

  • 0.5 teaspoons of vanilla essense.

  • 1.0 cups of plain flour.

  • 1.0 teaspoons of bicaronate soda.

  • 0.5 teaspoons of mixed spice.

  • 0.5 teaspoons of salt.

  • Icing:

  • 30 g soft butter (unsalted).

  • 60 g cream cheese.

  • 1.0 teaspoons of lemon rind.

  • 1.0 cups of icing sugar.

Method

  • 1.

    Cake:

  • 2.

    Pre heat oven at 180C.

  • 3.

    Combine eggs, sugar, oil, vanilla and sifted dry ingredients in food proccessor.

  • 4.

    Beat on a low speed until smooth.

  • 5.

    Stir in carrots and mix well.

  • 6.

    Then add walnuts last and mix well.

  • 7.

    Pour mixture into a well greased 8 inch ring tin.

  • 8.

    Bake on 180C for 45-50 minutes.

  • 9.

    When cool, top with cream cheese icing.

  • 10.

    Icing:

  • 11.

    Beat the butter and cream cheese until smooth and creamy.

  • 12.

    Mix in lemon rind and iccing sugar.

Notes

Can be served with out icing for lactose free people.
Walnuts can be excluded if needed.
