This is a White Christmas recipe made with White chocolate, as opposed to Copha.
When ever I take it to a party, everyone asks for the recipe. They say it's the best White chistmas they have ever had!


  • 500g White Chocolate Buttons

  • 1.5 cup Rice Bubbles

  • 120g Red Glace Cherries, cut in half

  • 50g Dried Craisins

  • 1 cup Roasted Almonds, cut in half

  • 2 cups Desciccated Coconut

  • 1 Teaspoon Vanilla Extrract


  • 1.

    Melt White Chocolate carefully over a double boiler.

  • 2.

    Remove from heat and fold in the rest of the ingredients

  • 3.

    Line a tray, approximately 38cm X 24cms with Baking Paper

  • 4.

    Using the back of a large metal spoon, press mixture into the tray

  • 5.

    Refrigerate overnight to set

  • 6.

    To serve, carefully turn White Christmas on to a cutting board

  • 7.

    Using a knife that has been dipped in hot water, cut into small squares or diamond shapes.

I bought roasted almonds and put them in. It was so quick and easy I was so proud of myself when i saw end product. Very yummy and Great recipe!!

And it takes 15 minutes including the roasting of the almonds, not 15 hours
