This is a great alternative to typical green salads or even the traditional waldorf salad.


  • Salad ingredients:

  • 100g snow peas

  • 3 cups cooked brown rice

  • 1 small red onion,

  • 1 small capsicum

  • 1 red apple

  • 1 cup raisins

  • 1/3 cup walnuts

  • Dressing ingreditents:

  • 3 tbsp light olive oil

  • 2 tbsp white vinegar

  • 2 tsp curry powder

  • 1 tsp brown sugar


  • 1.

    Blanch snow peas and set aside.

  • 2.

    Finely chop the red onion, capsicum, red apple and walnuts.

  • 3.

    Combine all salad ingredients in a large bowl and toss to mix well.

  • 4.

    In a small bowl or dressing bottle, combine the dressing ingredients and then toss through the salad.

I made this salad for Xmas 2010 and took to a friends house. There were 19 people and many salads but this was the only one that was completely finished. I have made it since and my family really enjoyed it.
