Chocolate and Fig Traditional Xmas pudding


  • 1kg Fig

  • 500g of currants, sultanas, dates, raisins (any combination)

  • Dash of Brandy

  • 200g walnuts

  • 250g brown sugar

  • 250g butter

  • 3 eggs

  • vanilla essence

  • 2 cups plain flour

  • 1/2 cup self raising flour

  • 1 tsp each of nutmeg, cinammon, mixed spice and ginger

  • 2 cups breadcrumbs

  • 1 caramello cream egg


  • 1.

    Chop the fruit, soak in brandy overnight.

  • 2.

    Add walnuts

  • 3.

    Cream butter and sugar, fold in eggs and vanilla

  • 4.

    Add fruit mixture

  • 5.

    Sift Flours and spices into fruit mixture

  • 6.

    Fold in breadcrumbs.

  • 7.

    Pour into papered pudding basin. Place caramello egg in the centre of the pudding.

  • 8.

    Steam for 5 hours
