Try this recipe for these absolutely delicious chocolate chip and chopped peanut biscuits.

Ingredients

  • 1 cup unsalted butter

  • 1 cup brown sugar

  • 1 cup white sugar

  • 2 eggs

  • Dash of vanilla

  • 2 cups plain flour

  • 2 cups rolled oats

  • 1/2 teaspoon

  • salt

  • 1 teaspoon bicarb soda

  • 1 teaspoon baking powder

  • 250g dark choc chips

  • 1 cup chopped peanuts

Method

  • 1.

    Cream butter, brown and white sugar together. Then add eggs and vanilla.

  • 2.

    Mix together with flour, oats, salt, bicarb soda and baking powder. Add choc chips and nuts.

  • 3.

    Refrigerate mixture for 15 minutes.

  • 4.

    Roll into small balls and place 5cm apart on baking paper.

  • 5.

    Bake for 8 minutes at 180 degrees.

Notes

Remove cookies from oven when they are just starting to brown - they will look a bit under cooked but will harden as they cool and go nice and chewy!
Cookie mixture can be frozen
