Magic Minutes to a Perfect Peach Pie........................................ Golden Brown Puff Pastry Surrounds Fresh Peaches, sliced thinly.
Lay a piece of Puff Pastry on the plate of Pizza cooker, pile peaches into the centre, dampen the edges of the pastry well, to about 1 inch from the outside, place another sheet of Puff Pastry on top, turn up the square corners to fit the Pizza plate, press down edges, make 3 or 4 vents with the tip of a sharp knife. Brush with a little milk or water Cook in Pizza maker 6 minutes, it should be golden brown (pizza makers may vary, mine has a glass spy-hole so I can see the progress), so easy, visitors can have fresh Peach (or any other pie) while they wait for the coffee to brew!!!
I don't add any sugar. Buy peaches or apricots when they're cheap ripe & plentiful, (tray buys are the best), peel and slice them, freeze them in small plastic bags in sutable sizes for your pie size, they only take minutes to defrost enough to add to the pie and are always on hand, of course they can be used for other recipes as well.
