I wanted to cook something quick and in one dish I used the base of my tagine as it is shallow and I was inspired by the Mexican dish Huevo Ranchos.
Pre-heat oven to 180
Put passata, beans, pancetta in shallow dish (base of tagine) and stir to combine
Place fish on top and spoon tomato mixture over the fish.
Put in the oven and bake for 10 minutes
Crack the 3 eggs over the fish and bake for another 5-10 minutes or longer depending on how you want your eggs cooked.
Add tabasco or salt and pepper as desired.
Vegetarians omit fish and panchetta add more vegetables
Shallow dish helps to cook it quickly
Use chorizo sausage instead of fish
