Pot pie with cauliflower, celery, mustard, tops with pastry

Ingredients

  • Pastry

  • I cup wholemeal flour

  • 1/4 cup oatbran

  • 90g butter

  • 2 tbspns water

  • 1 egg, lightly beaten

  • 2 tbspns sesame seeds

  • Cauliflower Filling

  • 1/2 small cauliflower

  • 30g butter

  • 1 medium onlin thinly sliced

  • 2 sticks celery, thinly sliced

  • 1/4 cup plain flour

  • 2 1/4 cups water

  • 1 large vegetable stock cube

  • 3 tspns seeded mustard

Method

  • 1.

    Pastry

  • 2.

    Combine the flour and oat bran, rub in butter

  • 3.

    Add enough water to mix inti firm dough

  • 4.

    Cover refrigerate 30 mins

  • 5.

    Roll pastry to a 5mm thickness

  • 6.

    Cauliflower Filling

  • 7.

    Boil, steam or microwave cauliflower unti just tender, drain. Set Aside

  • 8.

    Melt butter un large saucepan, add onion and celery

  • 9.

    Stir over medium heat until onion is soft

  • 10.

    Stir in flour, stir 1 minute

  • 11.

    Remove from heat and gradually add in combined water, stock cube and mustard

  • 12.

    Return to high heat and stir until mixture thickens

  • 13.

    Add califlower to mixture

  • 14.

    To make pie

  • 15.

    Spoon filling into 6 small overnproof dishes, brushing edges with egg.

  • 16.

    Cut pastry into six large rounds large enough to cover the dishes

  • 17.

    Pressly pastry firmly around edges

  • 18.

    Brush oastry with remaining egg and sprinkle with sesame seeds.

  • 19.

    Bake in moderately hotoven for 20 mins until pastry well browned
