This is a very simple quick recipe and the wafers are a delicious healthy snack on their own, hot or cold, or you can use them with dip. Great for work and school lunches too.
Heat a flat sandwich maker until ready.
Place one sheet of mountain bread on the sandwich maker.
Place spinach, cheese (and onion) on the bread sheet. Not too much so it's fairly flat. After the first couple you'll soon decide the amount of each ingredient that suits you.
Place another sheet of mountain bread on the top, and close the sandwich maker lid to flatten and cook.
Remove and cut into bite size pieces. Enjoy!
