Ingredients

  • 1 X 250 GRAMS PACKET PLAIN SWEET BISCUITS

  • 125 GRAMS BUTTER, MELTED

  • 250 GRAMS CREAM CHEESE, CUBED AND SOFTENED

  • 1 X 395 GRAMS CAN SWEETENED CONDENSED MILK

  • .5 CUP/ 125ML CREAM

  • 1 TABLESPOON GRATED LEMON ZEST

  • .5 CUP LEMON JUICE

  • 1-2 PUNNETS STRAWBERRIES, THINLY SLICED

Method

  • 1.

    BREAK THE BISCUITS INTO QUARTERS AND PLACE INTO PROCESSING BOWL.

  • 2.

    PROCESS UNTIL FINELY CRUSHED.

  • 3.

    WITH THE MOTOR STILL RUNNING, SLOWLY ADD THE MELTED BUTTER THROUGH THE FOOD CHUTE.

  • 4.

    PROCESS UNTIL COMBINED.

  • 5.

    REMOVE MIXTURE FROM PROCESSING BOWL AND PRESS OVER THE BASE AND THREE QUATERS UP THE SIDE OF A LIGHTLY GREASED 20CM SPRING-FORM PAN.

  • 6.

    COVER AND CHILL UNTIL FIRM

  • 7.

    PROCESS CREAM CHEESE, CONDENSED MILK, CREAM, LEMON ZEST AND JUICE UNTIL JUST SMOOTH, APPROX 30 SECONDS. DON'T OVER PROCESS.

  • 8.

    POUR MIXTURE INTO PREPARED BISCUIT CRUMB BASE, COVER AND REFRIGERATE FOR AT LEAST 24HOURS BEFORE SERVING.

  • 9.

    SERVE TOPPED WITH CUT STRAWBERRIES.
