A basic muffin mix you can tailor to suit your taste . . . Simply add, vanilla extract or other essences, choc chips, dried/frozen fruit, cocoa powder, chopped chocolate bars, even savoury inggredients such as grated cheese or bacon.


  • 1 cup Self Raiang Flour

  • 1 cup Plain Flour

  • 1/2 cup white sugar

  • 1/4 cup vegetable oil

  • 1 cup milk

  • 1 egg


  • 1.

    Preheat oven to 180C and line or grease a 12 cup muffin tin (or 6 cup texas muffin tin).

  • 2.

    In one bowl, sift together all the dry ingredients then mix in any of your chosen 'additions' to ensure they are distributed even through the mix.

  • 3.

    In another bowl, lightly wisk to gether the oil, milk and egg.

  • 4.

    Add the wet ingredients to the dry, and mix til only JUST combined.

  • 5.

    Fill muffin tins, and bake for 20-25 minutes.
