Italian Roast Lamb

Lamb roasted with a delicious tomato sauce


  • 1 large lump of lamb.. as big a leg as you can get

  • a cup of red wine

  • a large bottle of tomato, garlic pasta sauce (Dolmios works really well here)

  • gulp of garlic

  • vegetables for roasting.. pumpkin, potato, zucchini. sweet potato


  • 1.

    Put tghe lamb in large oven roasting dish, with vegetables roughly cut.

  • 2.

    Pour over the large bottle of pasta sauce,cup of red wine and add freshly squashed garlic to taste.

  • 3.

    Cook in moderate oven until the meat is tender enough to fall from the bone and the vegetables have a nice crisp edge.

  • 4.

    Put meat to rest, vegetables back in oven to crisp up some more on a flat oven tray while you use the juices to make a gravy.

  • 5.

    Sprinkle a little flour and salt over the bottom of the pan, cook a few minutes while stirring with a wooden spoon, then add enough water to make the gravy the consistancy that you like. Cook until boiling, turn down and leave simmering while you plate up the food then pour over the gravy or add it at the table from a gravy jug.


Add some fresh Italian Parsely to the plates to garnish and have a crusty bread along side. Polish off the bottle of red wine with the meal.
