this recipe is so easy to make and great for summertime bbq. only a few ingredients that most people have in there pantry or fridge. i make this salad once a week for my son who wont eat a toss salad. this is a recipe that you can add lib to , just remember the flavor in the dressing comes from the bacon


  • 250g chopped bacon with a little fat left on

  • 3 cups cooked longgrain rice approx

  • 1 cup frozen peas approx

  • 1 cup frozen corn approx

  • 3-4 tablespoons vegi oil

  • salt for seasoning

  • chopped walnuts if desired


  • 1.

    Add oil to medium heat fry pan. fry bacon in oil until slightly crisp and the fat of the bacon has melted . this is the dressing for the salad. cool.

  • 2.

    Place cooked rice in a salad bowl. cook peas and corn in microwave and when cool add to rice then add bacon and all the oil with it. give the salad a good stir check for seasoning sometimes the bacon will give off enough salt .

  • 3.

    You can add the walnuts in last if you wish


this salad keeps well for 2 or 3 days. when we have lots of people over for a bbq i make this the night before to save time.
you can double the quantity if your having a party
