This dish came about when I was searching for inspiration (yet again) for dinner ideas. I got this idea from what I had available at the time!
Uses cheeses instead of a typical sauce.

Ingredients

  • 675gm packet of Fresh Veal Tortellini ( Trio Colored)

  • Broccoli

  • Cauliflower

  • Carrot

  • 1/2 Red Pepper, sliced

  • salami - mild or hot, sliced

  • fetta

  • semi dried tomatoes

  • grated low fat tasty cheese

  • grated sharp parmesan

  • salt

  • pepper

Method

  • 1.

    Cut the broccoli & cauliflower into flowerets, place into a steaming saucepan & rinse.

  • 2.

    Peel & slice (or julienne) carrot, add to saucepan.

  • 3.

    Place on stove to steam vegetables, steam for 5 mins, then add red pepper for a further 3 minutes.

  • 4.

    Meanwhile, boil water in a large saucepan for pasta and add tortellini to cook for 5 minutes. Finishing time for cooking of tortellini & steamed vegetables to be the same.

  • 5.

    While these are cooling, cut salami into strips, cube the fetta and cut the semi dried tomatoes in half.

  • 6.

    When pasta is cooked, drain and add to large serving bowl.

  • 7.

    Add steamed vegetables.

  • 8.

    Mix through 2 handfuls of grated tasty cheese & 2 handfuls of grated parmesan.

  • 9.

    Add semi dried tomatoes, cubed fetta & salami strips.

  • 10.

    Mix with 1 more handful of the grated cheeses.

  • 11.

    Add salt & pepper, to taste.

Notes

Alternative choices - pick your own favorite combination of vegetables, discard salami and make it vegetarian.
Tip - it took me longer to type this recipe than it would have just to make it. It really is fast & easy to make.
