A very easy recipe which I made after left overs from another meal I was making.

Ingredients

  • Puff Pastry and different types of cheese, (what ever is available).

  • 0.5 cup grated taste cheese

  • 0.5 cup grated mozerella

  • 1 - 2 tspn grated parmasan

  • 2 sheets of rolled puff pastry

  • 2 eggs

  • 1 pinch of pepper

Method

  • 1.

    Mix all cheese ingredients together with 1 egg and the pepper. Cut each sheet of puff pastry to 9 equal squares. Put 1 full teaspoon of the cheese mixture in the middle of each square and fold into a triangle. Press edges together so that the cheese will not run out of the pastry when baking. Once finished, place on oven tray and brush egg on. Place in oven for 30-40 minutes in a 180C until puffs have become golden and crisp. Remove and serve with salad for light brunch or starters.

Notes

You could also use left over cottage , fetta or any other cheese that needs to be consumed - depending on whether you like it mild or sharp. You could also add sesame seeds on the brushed puffs just before placing into oven, for decorative purposes.
