An old family favourite cake recipe


  • 1 400gr tin crushed pineapple

  • 2 cups self raising flour

  • 4 eggs separated

  • 125 gr margarine or butter

  • 1 cup castor sugar

  • 1 1/2 cups coconut

  • 1 tsp vanilla essence


  • 1.

    Cream margarine and sugar

  • 2.

    Add egg yolks and mix well

  • 3.

    Add tinned pineapple and vanilla essence

  • 4.

    Mix well

  • 5.

    Add flour and mix well

  • 6.

    Siftly beat egg yolks and fold in mixture

  • 7.

    Add coconut

  • 8.

    Put mixture in a round 10 inch round tin

  • 9.

    Bake for 35min in moderate oven
