Lite but creamy pasta with chicken and bacon and your favourite vegetables
This is a meal I cook at home often and it lets me have a beautiful creamy pasta without using cream that is full of fat.
Cook pasta to packet directions.
Whilst pasta is cooking heat oil in a large fry pan and add spring onion, cook until it has softened. Add sliced bacon and chicken and cook until it has browned. Add the 2 cups of assorted vegetables and toss throughout chicken mixture. Cook for 1-2 minutes. Add lite carnation milk and bring to a simmer. Cook for 3 minutes then add cheese. Blend cornflour with water and add to sauce mixture stirring well. Cook until sauce has a reasonably thick consistency.
Drain pasta well and add to fry pay. Mix pasta through sauce and serve.
