Seafood stirfried then lit. Full of flavour and spectacular to watch cooking. Dinner party winner!


  • Tbsp Butter (Melted)

  • .5 cup virgin olive oil

  • 1 onion

  • clove garlic

  • 400 gm Seafood - Prawns, crayfish, Scallops, etc

  • .5 cup brandy

  • .5 cup Pesto sauce

  • 2 tbspn tomato paste

  • cup fresh basil

  • 2 - 3 tbspn Pernot

  • 2 - 3 tomatos (in pieces)

  • cup whipped cream

  • rocket salad

  • pasta of choice


  • 1.

    Melt butter and fry onion and garlic in wok / frypan.

  • 2.

    Add prawns and seafood and strifry, with scallops added only for the last minute.

  • 3.

    Add brandy and flambe.

  • 4.

    Add pesto sauce, tomato paste and basil, keeping it on the heat.

  • 5.

    Add Pernot, chopped tomatoes -stir.

  • 6.

    End with cream on top then slightly stirred in.

  • 7.

    Serve with rocket salad & pasta.


Have all the ingredients laid out ready - this is very quick to cook. The quicker the better.
