Fried Vermicelli

(with sesame oil and eggs)
Scald vermicelli (meen seen) in hot water for 30-40 seconds. Remove and drain. Place vermicelli into beaten eggs. Add salts, pepper and spring onions.

Ingredients

  • (3) eggs, lightly beaten,

  • (.25 tsp) salt,

  • (.25 tsp) pepper,

  • (1 tbsp) chopped spring onions,

  • (2-3 tbsp) pure sesame oil,

  • (25g) finely shredded old ginger,

  • (75g or 2) small bundles vermicelli (meen seen)

Method

  • 1.

    Scald vermicelli in hot water for 30-40 seconds. Remove and drain. Place vermicelli into beaten eggs. Add salts, pepper and spring onions.

    Heat sesame oil in a wok. Fry ginger till golden and crispy for 1-2 minutes.

    Pour in the beaten eggs together with the vermicelli. Cook over a medium high heat. When one side of the egg is cooked, toss over to cook the other side. Dish onto a serving plate and serve immediately.

    Fried vermicelli is a good dish for the family. It is adequate for serve to one. Increase by 4 to serve a family of four which is our family, myself, dad, son and daughter. It is easy family-friendly weeknight meal. My family love it, a home cooked meal according to my past and present cooking experience. My cook kitchen tips is I tidy my place and don’t go into long and lengthy ingredients. I cook very simply. One there is taste and I am a cheap cook but expensive in taste. Whatever I cook, Chinese, Indian, European, is good taste.

    CHICKEN & CASHEW NUTS is a good dish for the family and friends. It is adequate to serve a family of four which is our family, myself, dad, son and daughter or double it to increase friends. It is easy family-friendly weeknight meal.
