Summer prawn spagetti

Spagetti with prawns, rocket and a sundried tomato sauce

Ingredients

  • 500g - fresh or dried spagetti

  • 5oog - fresh de-shelled prawns

  • 2 -3 cloves - garlic

  • 1 - onoin

  • 250 ml - white wine

  • 1 tspn dried chilli

  • 250 g jar sundried tomatoes

  • juice of 1 lemon and zest

  • 2 handfulls of rocket

  • handfull of pinenuts

  • extra virgin olive oil

  • salt & pepper

  • cherry tomatoes

Method

  • 1.

    Cook spagetti until aldente

  • 2.

    Heat a pan & toast pinenuts until golden, set aside & allow to cool

  • 3.

    Add a splash of oil to pan add finely chopped onion & cook until transparent

  • 4.

    Add prawns & garlic, quickly colour on all sides

  • 5.

    Add wine & lemon zest & reduce by half

  • 6.

    Add finely chopped sundried tomateos

  • 7.

    Cover & simmer for 5 minutes

  • 8.

    Season to taste & add lemon juice, stir

  • 9.

    Add pasta, 2/3 rocket & pinenuts

  • 10.

    Garnish with extra rocket leaves & cherry tomato florets

  • 11.

    Drizzle with olive oil

Notes

Dont overcook prawns to avoid being rubbery.
When adding rocket serve immediately so it doesnt wilt.
