A yummy tuna pasta which can be easily prepared from ingredients in the pantry.


  • 2 small cans tuna in oil

  • 2 can cherry tomatoes

  • 1 onion diced

  • 1 clove garlic finely chopped

  • 1/2C extra virgin olive oil

  • 1 C mushrooms roughly chopped (shitake are great)

  • 1C basil leaves roughly chopped

  • 500g pasta (farfalle or penne)

  • 1T capers or olives optional


  • 1.

    Sweat down onion & garlic in oil

  • 2.

    Add (capers./olives at this stage)mushrooms and fry over medium heat until cooked

  • 3.

    Add tomatoes and squeeze down most of the cherries tomatoes to release their juices. Simmer for approx 10 minutes

  • 4.

    Drain tuna and fork through. add to tomatoes with basil. remove from heat

  • 5.

    Cook pasta al dente, drain and pour into sauce
