Chocolate fudge with dried cherries
Line a 20cm square pan with plastic wrap.
Place ingredients (except cherries) into a large microwave safe bowl.
Microwave on high for 1 1/2 minutes. Remove from oven and stir.
Retun to oven and microwave on high another 1 - 1 1/2 minutes. Remove from oven and stir in cherries.
Pour fudge into prepared pan. Smooth top.
Chill until set about 2 hours. Cut fudge into six rectangular pieces. Wrap each piece in plastic wrap. Store fudge to be used immediatley in refridgerator. Place other peices in freezer bags & freeze.
To serve. cut fudge into 2.5 cm peices and best served at room temperature.
