Ideal simple alternative to boring baked potatoes, everyone in our family loves this dish. So easy and tastes great.
Add potatoes to a large pan of boiling , salted water. Boil, uncovered, for 5 mins. Drain potatoes and return to pan. Cover pan with a tight fitting lid and shake pan from side to side at least 10 times, to slightly crush potatoes.
Melt lard in small pan until hot. Carefully pour over potatoes in pan. Add bacon then season with salt and pepper. Toss to combine well. Transfer mixture to a large baking dish.
Cook in a hot oven (200c) for about 1 hour, turning potatoes occasionally during cooking, or until crisp and browned.
Serve potatoes sprinkled with sage leaves.
