Best potato salad

Ingredients

  • Potatoes - cut into 1.5cm squares & boil.

  • 6 x eggs

  • whole egg mayo

  • Crisp bason

  • 6 x Shallots cooked in red wine vinegar

  • Chives

  • Pepper

  • Lemon zestLemon juice

Method

  • 1.

    Cook potato - 1.5cm cubes

  • 2.

    Cook bacon - add to bowl

  • 3.

    Cut shallots and cook in saucepan with red wine vinegar.

  • 4.

    Cut up chives finely

  • 5.

    Grate lemon zest

  • 6.

    Squeeze lemon juice into bowl

  • 7.

    Add pepper
