These jam drops are to die for , they are perfect for those who are gluten, wheat, dairy, nut, egg intolerant.
They look and taste like a "Normal" biscuit.


  • 2 cups of Brighterlife Pancake mix

  • 1/2 cup of sugar

  • 80g butter

  • 1/2 tspn of baking powder

  • 1 tspn vanilla

  • 1 egg

  • 30-50 mls of water

    Beat butter and sugar, add egg. Mix well.

  • 3.

    Add flour, baking powder and extra water.

  • 4.

    Mixture consistency should be like moist breadcrumbs and be able to be rolled

  • 5.

    In your hands into small balls easily.

  • 6.

    Press a hole into the middle with the end of a wooden spoon and place in a little jam.

  • 7.

    Bake at 160oC for 7-10minutes or until lightly browned.
