Nyonya Salad

I grow my own tomatoes, lemons, cucumbers, mint, coriander and chillies. Since I have dried prawns, belachan powder/paste(shrimp powder/paste), pineapples, eschalotes and garlic in my pantry - I quickly assembled a salad for my visitors.

Ingredients

  • Ingredients A

  • 5 eschalotes - minced

  • 2 tablespoons dried prawns - soaked in hot water for 5 mins

  • 2 pips garlic - chopped

  • 5 red chillies - deseeded and chopped

  • Ingredients B

  • 4 tomatoes - deseeded and sliced

  • 1 cucumber - deseeded - sliced

  • 1 pineapple - skinned and cored - sliced

  • 1 handful of chopped coriander leaves

  • 1 handful of chopped mint leaves

  • Ingredients C

  • 2 tablespoons lemon juice

  • 1 tablespoon belachan powder/paste

Method

  • 1.

    Pound Ingredients A in a mortar & pestle

  • 2.

    Mix Ingredients C

  • 3.

    Add Ingredients A and Ingredients C to Ingredients B - mix well

Notes

Deseeding tomatoes and cucumbers will keep the salad dry. Prepare this salad before hand and toss and mix at table
