Lightly floured and spiced leather jackets fried in oil[mixture peanut and vegetable]


  • 6 medium leather jackets; patted dry with absorbant paper

  • Plain Flour 1 cup

  • 2 cloves garlic crushed

  • salt

  • fish curry powder/ or own light curry mix 1tbsp

  • pepper cracked 1/2 tsp

  • chilli [optional]

  • sugar 1tsp

  • Oil mix peanut and vegetable , amount should til ti 1/2 cover fish


  • 1.

    Heat deep sided frypan containing oil mixture; medium to high temp

  • 2.

    Put 2 cloves crushed garlic in hot oil

  • 3.

    In a plastic bag mix flour salt, pepper, curry mix, chilli and sugar

  • 4.

    Put fish individually into bag, shake to well cover fish and place on plate

  • 5.

    Repeat to cover all fish with mixture

  • 6.

    Place 3 fish in hot oil and cook. turn after 4 minutes a side till golden and crispy on both sides

  • 7.

    Place fish and warmer and repeat with remaining fish

  • 8.

    Serve fish with mango salad
