BBQ lamb marinated in lemon, garlic, chilli, olive oil, and rosemary.
In a bowl mix the lemon juice, chilli, olive oil.
Remove the rosemary from the sprigs and add to the mixture.
Finely chop the garlic and add to mixture.
Add lamb to bowl and mix well.
Refrigerate over night.
Cook on a hot grill or BBQ for 2 - 3 minutes each side.
Let rest for 2 -3 minutes before eating.
This recipe can also be used for other cuts of lamb such as lamb racks. It can even be used for beef or chicken!
