A rich, sumptuous dessert with a crisp base, creamy filling and the taste of Bailey's Irish Cream.
Looks fantastic, tastes fantastic and is so easy to make the day before a dinner party.


  • 200g plain chocolate biscuits (not chocolate coated)

  • 90g butter, melted

  • 250g cream cheese

  • 1/4 cup castor sugar

  • 2 teaspoons gelatine

  • 1 tablespoon hot water

  • 300ml thickened cream, whipped

  • 1-2 tablespoons cocoa powder

  • 1-2 tablespoons Baileys


  • 1.

    Crush biscuits finely; mix with butter.

  • 2.

    Press evenly over a base only of a springform pan or pie plate.

  • 3.

    Refrigerate while making filling.

  • 4.

    Beat cream cheese and sugar until smooth.

  • 5.

    Sprinkle gelatine over hot water, mix thoroughly and let cool.

  • 6.

    Add to cream cheese mixture and beat well.

  • 7.

    Fold in whipped cream.

  • 8.

    Place half the mixture over chocolate biscuit base. Refrigerate.

  • 9.

    Mix remaining half of cream mixture with Bailey's and cocoa.

  • 10.

    Spoon carefully over white layer and refrigerate until set.

  • 11.

    You can let your hair down with decorations.

  • 12.

    Strawberries; raspberries and whipped cream; dark chocolate leaves.
