A light and savoury luncheon dish. Came from my mother


  • Lettuce (3-4 Lettuce leaf cups)

  • Large Tin Salmon (chilled)

  • Rice

  • Milk

  • Cheese (grated tasty)

  • Tin of Pears (or fresh pears in season)

  • Glace ginger


  • 1.

    Using iceberg lettuce, get 3-4 nice lettuce cup. Rinse in cold water and keep in fridge until ready to serve.

    Boil one cup of white rice till cooked. Keep warm

  • 3.

    Make a simple white sauce and add strong tasty cheese to make a tangy cheese sauce - keep hot

  • 4.


  • 5.

    Divide rice between lettuce cups

  • 6.

    Divide salmon and place on rice

  • 7.

    Put half pear into lettuce cup with rice and salmon

  • 8.

    Pour over hot cheese sauce.

  • 9.

    Top off with glace ginger pieces


This is a really nice luncheon dish.
