Using iceberg lettuce, get 3-4 nice lettuce cup. Rinse in cold water and keep in fridge until ready to serve.
Boil one cup of white rice till cooked. Keep warm
Make a simple white sauce and add strong tasty cheese to make a tangy cheese sauce - keep hot
Divide rice between lettuce cups
Divide salmon and place on rice
Put half pear into lettuce cup with rice and salmon
Pour over hot cheese sauce.
Top off with glace ginger pieces
