We eat a lot of pasta and always have a fish meal at least once a week and I always fiddle around with the sauce for the pasta. My husband makes the pasta with our own eggs

Ingredients

  • 200gs smoked salmon

  • 6 shallots

  • 2 teaspoons of oil

  • ¼ cup of chilli wine (We made this ourselves but if you don’t like hot use dry white wine)

  • 2 cloves of garlic finely chopped

  • About a cup of semi dried tomatoes (I do them myself by slicing and slow roasting them on baking paper with a sprinkle of salt for about 1-1&1/2 hrs)

  • Finely sliced preserved lemon (lemon zest will do)

  • Tablespoon of fresh tarragon finely sliced

Method

  • 1.

    Make the pasta – I like papadelle the best. Use 200 gms flour and 2 eggs and a pasta machine but any of the bought varieties would do.

  • 2.

    Put the oil in a heavy based frying pan and gently fry the garlic and shallots and lemon until they smell nice, then add the wine and simmer until it has reduced a bit.

  • 3.

    Add the tomatoes and let them poach in the wine for about 2 mins.

  • 4.

    Slice the salmon thinly and add to the pan along with the tarragon.

  • 5.

    Serve on the pasta

  • 6.

    Serves 2.

Notes

You can add any green vegies to it – peas are good and it is a low fat recipe and, if the pasta is homemade, low GI
