This is a basic muffin recipe that has never failed! It can easily be customised to include a range of different flavours, including blueberries, chocolate, or even cheese and herbs.
Whisk the egg and milk.
Combine all other ingredients and fold together – but don’t over stir!
Then add the ‘flavour’:
*Add some cocoa for chocolate muffins, and a small amount of extra milk.
*Add orange juice and zest
*Add banana and a spice such a cinnamon
*Add chocolate chips etc
If the mixture is too dry, add a dash of extra milk, or if it is too runny, add extra flour.
Spoon into paper cups in a muffin tray with greased edges.
Bake at 180 degrees Celcius for 15-20 minutes.
Take out and enjoy!
This makes 8 big muffins. Doubling the quantities makes 12 big muffins
