Champion Cheese Muffins

Quick, easy and perfect to whip up to take on a picnic or for a lazy Sunday brunch.


  • 2 cups Tasty Cheese - grated

  • 1.5 cups Self Raising Flour

  • .5 Teaspoon Salt

  • 1 Tablespoon Sugar

  • 1 pinch Cayenne Pepper

  • 1 Egg

  • 1 cup Milk


  • 1.

    Mix all the dry ingredients together.

  • 2.

    In a separate bowl, mix the wet ingredients.

  • 3.

    Add the dry mix to the wet mix and combine thoroughly.

  • 4.

    Spoon into a greased 12 cup muffin tray (standard size - not Jumbo)

  • 5.

    Bake at 210C for 12 mins.

I tried this also and found it a very reliable little recipe! Even though I made some hefty alterations (3 rashers of bacon and a lighlty fried red onion added) the consistency remained really good. Also substituted a quarter of the tasty cheese with parmesan and the results were still excellent in spite of my relentless tweaking! Sorry can't help it. Pleased to find this one.
