Phillo Topped Vegie Pie

Nice tasty side dish or simple lunch

Ingredients

  • 1 tab cornflour

  • 1/4 vegie stock cube

  • salt & pepper

  • 100ml milk

  • 1/3 cup grated cheese

  • 1 sheet phillo

  • 1/4 tea dried, mixed herbs

  • 225g frozen mixed vegies

  • 2 tea oil

Method

  • 1.

    Preheat oven 200' or 180' fan bake.

  • 2.

    Mix together in a small pot the cornflour and 2 tab milk, stir in the rest of the milk, herbs and stock cube.

  • 3.

    Bring to boil until sauce thickens.

  • 4.

    Stir in cheese, then the vegies and salt and pepper.

  • 5.

    Spoon into small oven dish.

  • 6.

    Cut the pastry into 4 squares, brush with a little oil, scrunch each piece up and put on top of pie.

  • 7.

    Bake for 15 -20 mins - till golden on top.

Notes

Make sure that the vegie mixture is at least 3/4in below the rim of the dish.
