A great tasty salad to take advantage of those summer ingredients
In a bowl, gently toss the prawns, fruit, cucumber and onion.
Spread the dill and mint and cashews over the prawns.
Place the dressing ingredients in a jar and shake well to combine.
Pour the dressing over the salad.
Place in refrigerator for at least 15 minutes before serving to allow flavours to develop.
