easy resfreshing salad, great with barbequed lamb.


  • 4 tblsp couscous

  • 1 tspn butter

  • 2 tspn cumin (ground)

  • 1/2 punnet cherry tomaotes (halved)

  • small lebanese cucumber (roughly diced)

  • 1/2 red onion (chpped)

  • hanful chopped italian parsley

  • 3 tblspn EVO

  • 1 tbspn balsamic vinegar


  • 1.

    Soak coucous with butter and cumin in 1/2 cup boiling water till swollen.

  • 2.

    Mix EVO and vinegar to make dressing

  • 3.

    Mix all ingrediants together to make a wonderful salad

  • 4.
