The EASIEST fruit cake you can possibly make.
Soak the fruit in the juice overnight in the fridge.
Add the flour and mix thoroughly.
(Mix in the chopped walnuts at this point if you decide to add them)
Pour mixture into large round cake tin, divide evenly between 2 tins or pour into muffin tray.
Cook for approx 1 hour at 180 degrees celcius (may take a little longer depending on your oven - check with a skewer - it should come out clean)
Allow to cool and enjoy!
