This is a simple and tasty way to get lots of veggies in to a single meal. The recipe can be tweaked to suit anyone's tastes.


  • 3 Rashes Bacon

  • 1 Large Onion

  • 2 Cloves Garlic

  • 2 Carrots

  • 2 Potatoes

  • 2 Parsnips

  • 1 Cup Pumpkin

  • 2 Zucchinis

  • 2 Tomatoes

  • 1 Cup Green Beans

  • 1 L Beef Stock

  • 2 Cups Water


  • 1.

    Finely chop the bacon, onion and garlic

  • 2.

    Dice the rest of the vegetables into roughly equal sized pieces

  • 3.

    Heat 2 tablespoons of vegetable oil in a stockpot or deep saucepan

  • 4.

    Add the bacon, onion and garlic and stir for 2 minutes

  • 5.

    Add the harder veggies and stir for a few minutes.

  • 6.

    Add the stock and simmer for 10 minutes

  • 7.

    Add the remaining ingredients and simmer until everything is tender

You can pretty much use whatever veggies you have access to, fresh or frozen for this. Vegetarians could use veggie stock & skip the bacon, and you can add some pasta to bulk it up a bit too. A tin of Kidney beans or similar will add a bit of protein too.
