This is a simple and tasty way to get lots of veggies in to a single meal. The recipe can be tweaked to suit anyone's tastes.
Finely chop the bacon, onion and garlic
Dice the rest of the vegetables into roughly equal sized pieces
Heat 2 tablespoons of vegetable oil in a stockpot or deep saucepan
Add the bacon, onion and garlic and stir for 2 minutes
Add the harder veggies and stir for a few minutes.
Add the stock and simmer for 10 minutes
Add the remaining ingredients and simmer until everything is tender
