Cook the peas in boiling water with a pinch of salt, with the lid off, for 3 or 4 mins, until they are just cooked.
Drain and tip into a food processor and whiz up with the butter, mint and some sea salt and pepper to taste.
If you are making it ahead of time, make sure that you do not cover it while it is hot, so as to retain the fresh green colour and do not simmer it for ages, just heat it up when you want it.
