Delicious, healthy broccoli patties can be served as an entree or as finger food at a party.


  • 500g broccoli

  • 1 large egg

  • 2 anchovies chopped fine

  • 100gr Parmesan cheese grated

  • 1 handful pine nuts

  • 1 handful sultanas

  • ½ cup breadcrumbs

  • olive oil

  • salt chilli flakes to taste

  • Extra flour, 1 beaten egg and breadcrumbs to coat


  • 1.

    Steam broccoli until soft.

  • 2.

    When drained, blend, using stick blender, with anchovy filets.

  • 3.

    Add the other ingredients and stir well with a spoon until you have a firm mixture.

  • 4.

    Shape the mixture into flattish patties.

  • 5.

    Coat with flour, egg and breadcrumbs.

  • 6.

    Heat a little olive oil in a frying pan.

  • 7.

    When the oil is hot fry the patties until golden brown on both sides.

  • 8.

    Place on kitchen paper to remove any excess oil and serve as a great starter.

Can be eaten hot or cold. Omit the anchovies for a vegetarian version. Cauliflower can be used instead of broccoli.
