Delicious, healthy broccoli patties can be served as an entree or as finger food at a party.
Steam broccoli until soft.
When drained, blend, using stick blender, with anchovy filets.
Add the other ingredients and stir well with a spoon until you have a firm mixture.
Shape the mixture into flattish patties.
Coat with flour, egg and breadcrumbs.
Heat a little olive oil in a frying pan.
When the oil is hot fry the patties until golden brown on both sides.
Place on kitchen paper to remove any excess oil and serve as a great starter.
