Pre-heat oven to 150C
Using a pan that can be placed in the oven ...
Fry up the chicken drumsticks and onion slices until they are browned all over (use a little olive oil spray or olive oil).
When chicken is brown, add curry powder and stock cubes and cook for 1 minute to release flavour.
Add in the whole tin of Peaches in Mango Syrup (including the mango syrup) and stir to mix.
Add a pinch of salt and the coconut essence.
Put lid on pan and place in oven to casserole for 1 hour.
After 1 hour, mix the water and plain flour together in a cup, remove casserole from oven and stir in water and plain flour mixture to thicken.
Serve with steamed veggies and rice.

Adjust the amount of thickening needed to suit dish - can also use cornflour and water for thickening.
I have made this with chicken breasts but the flavour is much nicer with the chicken cooked on the bone. Remove the skin from the drumsticks if you would like a healthier version.
