Carrot cake

Very moist and dense, making it ideal for decorating, which is a little passion of mine.


  • 3 eggs

  • 2/3 cup of oil

  • 2/3 cup of sour cream (low fat okay)

  • 1 tsp vanilla essence

  • 1/3 cup of golden syrup

  • 1/2 cup of brown sugar

  • 2 cups of densely packed grated carrots

  • 1 cup self-raising flour

  • 2/3 cup of plain flour

  • 1/2 tsp ground cinnamon

  • 1 tsp of bicarbonate of soda

  • 1/2 cup of coarsely chopped walnuts


  • 1.

    Mix the eggs, oil, sour cream, vanilla essence, syrup and sugar together in a large bowl until just combined.

  • 2.

    Stir in the grated carrots.

  • 3.

    Mix bicarbonate of soda, cinnamon and sifted flour together in another bowl. make a well in the middle and add the wet ingredients and fold until combined.

  • 4.

    Pour into greased 20 cm round pan and bake in oven preheated at 175 deg for about 1 hr 15 min. Test with skewer.
