Yummy - has been adapted so I didnt have suigar or nuts in this recipe due to the medical needs of the family


  • 2 cups mixed dried fruit

  • ½ cup chopped dried apricots

  • ½ cup boiling water

  • 2 teaspoons fresh lemon juice

  • 1/3 cup sunflower kernels

  • ½ cup skim milk powder

  • ½ cup quick cooking oats

  • ¾ cup desiccated coconut


  • 1.

    Combine mixed dried fruit and chopped dried apricots in a bowl.

    Add boiling water; allow to steep for 10 minutes to soften fruit.

  • 3.

    Add lemon juice, sunflower kernels, skim milk powder and oats. Mix well to a paste

    Take heaped teaspoon of the mixture and roll into balls (don't make them too big).

  • 6.

    Then roll in the coconut and place on tray lined with non-stick paper. Set and store in the refrigerator.


A useful addition for the preschool lunchbox as it's "nut free". At home, add 1/3 cup chopped nuts if nut allergy is not a problem in your family.
