Combine mixed dried fruit and chopped dried apricots in a bowl.
Add boiling water; allow to steep for 10 minutes to soften fruit.
Add lemon juice, sunflower kernels, skim milk powder and oats. Mix well to a paste
Take heaped teaspoon of the mixture and roll into balls (don't make them too big).
Then roll in the coconut and place on tray lined with non-stick paper. Set and store in the refrigerator.
